Breakfast Greens and Poached Eggs


  • 2 cups bone broth
  • handful of spinach or kale or other greens
  • asparagus, 4” slices that are halved lengthwise
  • small diced onion
  • 2 eggs
  • cayenne, salt & pepper


  1. Heat your broth.
  2. Add sliced asparagus. Cook 3 minutes
  3. Add spinach & onions. Stir 1-2 minutes.
  4. Gently add eggs & cover. Let them set, 2-3 minutes.
  5. Season with salt & cayenne to taste.
  6. Remove the greens and eggs to a bowl. Strain the broth into a mug. You can drink it alongside the breakfast or reheat it later for a mid-morning snack. You’ll get a boost of nutrients and flavor from having simmered the greens in it.
