Breakfast Greens and Poached Eggs
Ingredients:
- 2 cups bone broth
- handful of spinach or kale or other greens
- asparagus, 4” slices that are halved lengthwise
- small diced onion
- 2 eggs
- cayenne, salt & pepper
Directions:
- Heat your broth.
- Add sliced asparagus. Cook 3 minutes
- Add spinach & onions. Stir 1-2 minutes.
- Gently add eggs & cover. Let them set, 2-3 minutes.
- Season with salt & cayenne to taste.
- Remove the greens and eggs to a bowl. Strain the broth into a mug. You can drink it alongside the breakfast or reheat it later for a mid-morning snack. You’ll get a boost of nutrients and flavor from having simmered the greens in it.
