Snack Lettuce Wraps
Ideal for a quick snack and oh so versatile. This recipe includes what I happened to have on hand, but anything crunchy will do well in here, as long as it’s thinly sliced. The pumpkin seeds add a satisfying crunch as well as boosting the protein content. Butter leaf works great because you can fold it without breaking it, but you can also use another type of large leaf lettuce.
Ingredients:
- butter leaf lettuce
- hummus
- cucumber, sliced thin & halved
- red onion, diced
- basil
- pumpkin seeds
- a few strands of probiotic kraut (optional)
Directions:
Spread a layer of humus on the lettuce. Sprinkle with the veggies- try not to overload- roll them up and enjoy. Repeat.
