Breakfast Scramble with Spinach

A favorite stand-by, so quick and filling.  Keeping the spinach separate lets you enjoy way more of it than if you’d added it to the eggs.  Plus this way, you’ll taste the delicate sweetness of the peppers and tomatoes.

Ingredients:

  • several handfuls of spinach
  • several eggs (the more you want, the more you add)
  • yellow peppers, sliced
  • tomatoes, sliced
  • salt and pepper
  • sauerkraut, optional*

Directions:

  1. Heat oil in pan, cook yellow peppers and onions until soft.
  2. Push veggies to the side and add in whisked eggs. Once they start to firm up, stir everything together.
  3. Plate and top with tomato slices. Season to taste.
  4. Using the same hot pan (if you’d like) add in handfuls of spinach. Top with a bit of olive oil, stir & season.  You just want to wilt it- by the time you’ve sipped your tea, it will be done.

*Sauerkraut (made without vinegar or heat) is an amazing source of probiotics.  Start off small to get used to it and soon you’ll be adding it to everything.
